Tack vare vasslen jäser de upp fint trots riklig fyllning.
Örterna kan varieras. Persilja passar bra men också färdigblandade örtkryddor. Kanske en starkare mex - krydda. Smula torkade trattkantareller blir gott. Ävem smulad stek bacon. Väljer man ost ska den ha stark smak, t.ex parmesan.
Ingredienser:
( 6 maximuffins eller 12 små )
4 1/2 dl vetemjöl
2 tsk bakpulver
2 tsk oregano
2 tsk basilika
2 krm vitlökspulver eller 2 finhackade klyftor
1/2 - 1 tsk salt
( 1/4 krm chilipulver )
1 ägg
1/2 dl rapsolja
2 1/2 dl vassle
1/2 dl finhackade torkade tomater, gärna de i olja på burk
1 dl finhackad persilja
Blanda alla torra ingredienser i en bunke.
Vispa ihop vassle och ägg och tillsätt tillsammans med olja, tomater och persilja. Blanda smeten men undvik att röra för länge.
Fördela smeten i 12 dubbla pappersformar elller 6 smorda muffinsformar av metall. Grädda i mitten av ugnen i ca 15 min för den lilla storleken och ca 25 min för stora.
