Så här gör du
Salta och peppra strömmingen. Bred på lite senap och strö dill på insidan av varje strömming. Lägg ihop flundrorna två och två med köttsidan mot varandra. Blanda rågmjöl och ströbröd och vänd strömmingsflundrorna i blandningen. Stek dem knapriga och ganska mörka - men utan att bränna dem - i smör i en stekpanna.
När strömmingsflundrorna kallnat läggs de i lagen och får stå svalt minst ett dygn.
Servera med kokt potatis eller på en knäckebrödsskiva med gräddfil och klippt grässlök.
