4 bitar benfri laxfilé á 150 g
2 tsk grovt salt
400 g färsk sparris
1 knipa rädisor
1 knippa dill
2 äggulor
2 msk spad från laxen eller sparrisen
2 dl smält osaltat smör
saften av 1/2 citron
salt, nymalen vitpeppar och en knivsudd cayennepeppar
Så här gör du
Skala sparrisen, bind ihop den till en rulle och koka den i lättsaltat vatten, ca 12 minuter. Ångkoka laxen, kryddad med grovt salt i ca 10 minuter. Har du ingen ångkokare eller vapeur så kan du koka den i en gryta med en upp och nervänd tallrik i och lite vatten. Sätt på lock när du ångkokar
Hollandaisesås
Vispa äggulorna och vätskan över ånga till en fluffig smet. Det går bra med en elvisp på högsta hastighet. Lyft av grytan från värmen och vispa i det smälta 37 grader varma, klara smöret. Fortsätt gärna med elvisp men minska hastigheten.
Lägg upp lax och sparris på ett fat, garnera med smörfrästa halva rädisor och dillkvistar.
Servera nykokt färsk potatis, en citronhalva och hollandaisesåsen till.
